2023 Pinot Noir 'Oeuf en Béton' (2 bottles)

Whole Cluster fermented, crushed by foot (in rubber boots), and then aged in a Concrete Egg for a short élevage of 7 months to deliver freshness and pure pinocity (this is a word used in the winemaker world). There is no air transfer through the connected unlike barrels which allow the wine to slowly evaporate and become more concentrated.

Tasting Notes: Delicate florals, wild strawberry, tart cherry, and pomegranate. No oak. Just pure Bonny Doon beauty.

2024 Rosé of Pinot Noir (2 bottles)

Aged in a Concrete Egg, this Dry, crisp, and gorgeously pale Rosé is lively on the pallet and crystal clean.

Tasting Notes: Pale pink with a golden core. Aromas of white peach, wild strawberries, Earl Grey tea, and coastal minerality. Creamy texture, clean finish.

2023 Pinot Carbonica 94 points, Wine Enthusiast (2 bottles)

The final Concrete Egg wine was fermented using carbonic maceration which is a process in which the grapes are gently placed into a concrete tank with a closed lid. I pump CO2 gas into the tank for a few minutes every day to evacuate all oxygen until fermentation begins. From there I just leave the grapes alone and don't do anything to the fermentation for close to a month. This Carbonic Maceration technique causes the fermentation to happen inside the berries trapping unique aromatics like no other. Once the fermentation is over, the wine pressed off and aged in a Concrete Egg for around 8 months. (inspired by Beaujolais).

Tasting Notes: Fresh strawberry, cinnamon stick, peppercorn. Zippy acidity and lively summer energy.
