Bald Mountain Vineyard, located in Bonny Doon is owned and farmed by Jim Beauregard. Planted in 1900, the 40 acre vineyard sits at an elevation of 920 to 1050 feet on a southwest facing slope. Monterey Bay marine influences combine with the rare white sandy Zayante soild to produce wines with minerality and striking acidity.
The fruit was whole cluster pressed and settled in a stainless steel tank over night. It was then moved to matured American Oak where it fermented with native yeast for 23 days. The wine stayed on the lees for 32 months before bottling. Extended aging makes the wine rich and complex
